Chocolate Cake and Chocolate Sauce

Chocolate Cake and Chocolate Sauce (Tuesday 9th Feb 2010)
Ingredients
5oz Self Raising Flour
6oz Caster Sugar
6oz Soft Butter/Margarine
3 Medium Eggs
1 ½ oz cocoa
1tsp vanilla essence
1tsp baking powder
Pinch of salt

Preheat your oven to 180C (I think that is gas mark 4).

Now gather all your ingredients

This cake is so simple to make, you literally throw it all in a mixer,(you can use a  hand whisk or a wooden spoon) and blitz for at least 1 minute. It should have a thick but droppable consistency.

My girls love square cakes ( not that it tastes better I just think that it is divided more equally lol) so they use a square 7inch tin. I just grease it, I don’t feel that this cake needs lining but if you like to then please do!

Make sure you get it all out of your bowl and  it doesn’t need levelling.

Now put it in the oven and cook for about 40 minutes. I find that I do need to keep an eye on it for the last 5 to 10 minutes because for some strange reason it often needs slightly more than 40 minutes. Insert a skewer (or a chopstick) and it should come out clean. Leave to cool on the side and once cooler invert onto a plate.

CHOCOLATE SAUCE
Ingredients

200gram of chocolate
4tsp vanilla essence
200ml single cream
5tbsp of golden syrup

Again, I love easy cooking. Being a mum of 4 I am often ‘helped’ so I like cooking that is quick and simple. Once again put everything into a heavy based saucepan and heat through gently stirring all the time. Once thickened cool slightly before pouring over cake.

The sauce can be frozen for up to 1 month and can be kept in the fridge for a week before being gently heated through.

Now sit down and eat and enjoy!! By the way I must give thanks to my three girls who helped, prepare, cook and photograph the lovely cake! Oh and they ate it too hehehehe.
